How you all are doing? Certainly, it’s been a tough time for all. But at least we can stay positive by mind and soul. Well, do you know, cooking is one of the activities that help relax our mind to some extent. So, here we are with one of the exotic recipes of this week. That is, Besan mangodi.

Mangodi is a famous and one of the toothsome dishes of Rajasthani cuisine. It has its own unique place in Rajasthan’s heart. You might have heard about a different type of mangodis like dal mangodi, masala mangodi, etc, Besan mangodi (gram flour) has become our favourite from the day we have tried. So, let’s see how to make besan mangodi. Basically, we will make this recipe in two parts: preparation of mangodi and the second is the preparation of its gravy or curry.

Gram flour contains vitamin B1, B2, magnesium, phosphorus, proteins, and amino acids essential for the human body. Also, folate is found in it which keeps the brain healthy and enhance its working capacity. So, let’s see how to make besan mangodi.  Basically, we will make this recipe in two parts: preparation of mangodi and the second is the preparation of its gravy or curry.

Equipment

  • Deep Frying Pan

Ingredients
  

Part 1. Preparation of Besan (gram flour) mangodi.

  • 250 Gram Gram Flour
  • Salt
  • ¼ tsp Asafoetida
  • ¼ tsp Red Chilli Powder

Part 2. Preparation of curry/gravy for besan mangodi.

  • 2 tbsp Cooking Oil
  • ¼ tsp Asafoetida
  • Salt
  • ½ tbsp Cumin Seeds
  • ½ tsp Red Chilli Powder
  • 5~7 leaves Fresh Coriander
  • 1 tsp Turmeric Powder
  • ½ tsp Coriander Powder
  • 1 tsp Garam Masala
  • 2 Pcs Tomatoes
  • 1 Pc Lemon

Instructions
 

Part 1. Preparation of Besan (gram flour) mangodi.

  • Take a bowl and add gram flour, salt, red chilli powder, asafoetida.
  • Knead this mixture by adding the water slowly. Keep the dough in a moderate and binding consistency.
  • Then, make small balls of the prepared dough.
  • At last, fry these small balls in deep frying pan until the balls they turn golden brown in colour.
  • Take them out and place them on a tissue paper so that it can absorb extra oil from the mangodi.

Part 2. Preparation of curry/gravy for besan mangodi.

    So, mangodis are ready, now its time to make them more delicious by putting them into a mouth-watering gravy or curry.

    • Take two tablespoons of cooking oil in a non-stick pan. Let the oil heat.
    • Add cumin seeds, asafoetida, mustard seeds. Let them pop.
    • Now, add well grinded tomatoes and give them a good boil for few minutes at a low flame.
    • Add turmeric powder, red chilli powder, coriander powder and salt as per your taste.
    • Then, add two glasses of water and let it boil for 5-7 minutes at low flame.
    • Finally, put the prepared besan mangodi in the gravy and give it a good boil.
    • Squeeze lemon to it.
    • Garnish it with some fresh coriander leaves.
